Healthy Shrimp Mousse

  • 2 Gelatin Sheet
  • 200 g large shrimp in shell
  • 1 st Organic eggs
  • 1 cup sour cream
  • 1 tbsp chili sauce
  • a squeeze of lemon
  • Sea salt
  • cayenne pepper
  • 1 tbsp white wine


  • Soak gelatin in cold water for 5 minutes. Peel the shrimps and chop them.
  • Stir the egg yolk with the chopped shrimps into the sour cream.
  • Season with chili sauce, lemon, salt and cayenne pepper.
  • Squeeze the gelatine leaves and melted into the wine over low heat.
  • Stir this very well to shrimp mix with a tablespoon
  • Whisk the egg whites to really hard foam.
  • Gently fold the whites into the shrimp mix.
  • Fill in small glass, place in the fridge for a few hours to harden.
  • Garnish with shrimp, lemon and lemon balm or dill.
