- 2 cup (180g) rolled oats
- 1½ cups (170g) oat flour*
- ¾ cup (155g) brown sugar
- 1½ teaspoons xanthan gum
- ½ teaspoon bicarbonate of soda
- 125g butter, melted
Preheat oven to 180ºC. Grease and line a 19 x 29cm slice pan with baking paper, allowing the 2 long sides to overhang.
Combine the oats, flour, sugar, xanthan gum and bicarbonate of soda in a medium bowl. Add the butter and stir to combine. Spoon into the prepared pan and smooth the surface with the back of a spoon.
Bake for 30 minutes or until golden brown and cooked through. Set aside to cool. Transfer to a clean work surface and cut into twenty 4 x 5cm bars.
